Pizza and Pinot Party

The life of an ex-pat (I’m a Trini living in the Cayman Islands) can get pretty lonely if you don’t surround yourself with good people.  I’ve been lucky to have found a great little group of friends. We often take turns entertaining at our respective homes.

Last night, I decided to throw a small pizza and pinot party!  Of course, now that I have a food blog I couldn’t have any old pizza.  I decided to make the pizza from scratch. I also thought it would be fun for guests to select their own toppings especially since I have a couple vegetarian friends.

Here’s how I pulled it all together!

First of all, a few good bottles of wine.  I’m not exactly a wine connoisseur so I went to my local wine store for recommendations for a reasonably priced  Pinot Noir and Pinot Grigio. I went with a Swanson Vineyards Napa Valley  2008 Pinot Grigio and a Kim Crawford 2008 Marlborough Pinot Noir.

Next, pizza time!

First, the dough:-

What to use

2 1/2 cups sifted all purpose flour

1 1/2 tsp salt

1 tsp sugar

1 tbsp instant yeast

1/4 vegetable oil

1 cup warm water

What to do

Combine flour, salt, sugar and yeast.  Stir in oil and warm water and knead well.  Roll out dough  to your desired thickness and spread on greased pizza pan.

This  should give you one large pizza with about eight slices.

 

I also wanted to do some individual pizzas.  For that, I used  store bought flat bread.  These were Southwestern style and flavored with  corn and jalapeno.

Toppings

Your choice of toppings is limitless!

These were my selections:-

Pineapple

Mushroom

Sweet pepper

Onion

Spinach

Sundried tomato

Fresh tomato

Spinach

Jalapeno

Mozzarella cheese

Cheddar cheese

Goat cheese

Pepperoni

Parsley

 

To assemble your pizzas, use a good quality pizza sauce as a base and layer your selection of toppings and top it off with a final layer of cheese.  Bake at 350 for 25 to 30 minutes until golden brown.

For the flat bread pizzas, bake until cheese is melted.

I served my signature aperitif and  nachos with salsa and hummus while we waited for the pizzas.

And that’s pretty much all you need for a rocking good time!

My friends loved it!  We stuffed ourselves, drank lots of wine,  watched Sex and the City reruns and talked about boys!  Good times.

 

 

 

 

Oops! I almost forgot dessert…. Fresh strawberries topped with Nutella, a sprinkle of Splenda and drizzled with Hershey’s Lite Chocolate Syrup. Tasty and healthy!
